Warm Potato & Bean Salad
Super delicious salad to have on its own or as a side to your favourite meat!

- Using a large pot, boil the green beans for 1-2 minutes. Use a slotted spoon to remove and set aside.
- Add the potatoes to the pot. Boil in salted water for 8-10 minutes, or until tender. Drain and let cool slightly. Gently break up into bite-sized pieces.
- Transfer the potatoes and beans to a large bowl. Add the onion and salt and pepper to taste. Toss lightly
- In a small bowl, combine the mayonnaise, sour cream and dill. Add salt and pepper to taste.
- Add dressing to salad mix, and gently mix through.

- 500g green beans, trimmed
- 1 red onion, diced
- 3/4 cup mayonnaise
- 2 tbsp sour cream
- Fresh dill, chopped
- Salt & pepper to taste
