Chicken Burrito Bowls

  1. Dice chicken into 1cm cubes, drizzle over 1 tbsp oil to coat. Sprinkle spice mix and toss well until all chicken is coated.
  2. Rinse your rice and bring 3 cups of water to a boil. Add rice to the boiling water, add a pinch of salt.
  3. Bring pan back to a simmer and lower heat to cook, covered for 18 minutes, or until rice is tender and water is absorbed.
  4. Add a small amount of oil and cook the chicken for three minutes on each side or until cooked through and golden brown.
  5. Display the chicken and rice in containers and leave to cool.
  6. Shred the lettuce, drain the corn and beans, be sure to rinse the beans.
  7. Add the lettuce, corn and beans to the container. Serve with a wedge of lime and sliced jalapeños.
  8. If you are meal prepping be sure to let the chicken and rice cool before refrigerating. Enjoy!


  • 3 cups Water
  • 1.5 cups Rice
  • 1 sachet Chicken Spice Mix
  • 1/2kg Chicken Breast
  • 1/2 small Iceberg Lettuce
  • 400g Canned Corn
  • 400g Black Beans
  • 1 Lime
  • 1 small Jalapeño
  • Olive Oil
  • Salt
