Chicken Burrito Bowls
Make meal prep easy with these delicious chicken burrito bowls

- Dice chicken into 1cm cubes, drizzle over 1 tbsp oil to coat. Sprinkle spice mix and toss well until all chicken is coated.
- Rinse your rice and bring 3 cups of water to a boil. Add rice to the boiling water, add a pinch of salt.
- Bring pan back to a simmer and lower heat to cook, covered for 18 minutes, or until rice is tender and water is absorbed.
- Add a small amount of oil and cook the chicken for three minutes on each side or until cooked through and golden brown.
- Display the chicken and rice in containers and leave to cool.
- Shred the lettuce, drain the corn and beans, be sure to rinse the beans.
- Add the lettuce, corn and beans to the container. Serve with a wedge of lime and sliced jalapeños.
- If you are meal prepping be sure to let the chicken and rice cool before refrigerating. Enjoy!

- 1/2kg Chicken Breast
- 1/2 small Iceberg Lettuce
- 400g Canned Corn
- 400g Black Beans
- 1 Lime
- 1 small Jalapeño
- Olive Oil
- Salt
