Vegetable curry
Please the crowd with this delicious winter warmer

- Heat the oil in a pan and saute the garlic paste. Add grated onion and cook it until light golden brown.
- Add Garam Masala, salt and stir it for a few minutes.
- Add the tomatoes, mix vegetables and water. Add turmeric powder, chilli powder and mix them well. Cover the pan and cook for about 15 minutes until vegetables are tender.
- Stir in the cream and sprinkle some fresh chopped coriander leaves.
- Serve with Roti or Naan bread. Serve this veggie curry over some steaming hot rice.

- 1 tbsp vegetable oil
- 120g onion, diced
- 500g Mix vegetables
- 2 tbsp Garam Masala
- 1/2 tbsp Turmeric Powder
- 1 tbsp Red chilli Powder
- 50g canned chopped tomatoes
- 300ml water or vegetable stock
- 100ml single cream
- 1 tbsp fresh coriander leaves, chopped
- 200gm cooked rice
