Vegetable Stir Fry

Delicious vegetable stir fry, loaded with veggies and full of flavour!

Method

  1. Add noodles into a bowl with hot water. Leave to soak for 5 minutes. Drain water. Using scissors, cut the noodles into shorter strands. Set aside.
  2. Combine the sugar, chili flakes, oyster sauce and soy sauce in a bowl. Mix well and set aside
  3. Heat a wok or a pan on high heat. Add garlic, cook until golden. Add in carrot, mushroom, zucchini and capsicum and continue cooking for another minute.
  4. Add the egg and scramble. Add in noodles and stir fry sauce. Mix well and continue cooking for 2-3 minutes.
  5. Add chives, chili and mix well. Serve immediately.

  • ½ tsp sugar
  • ¼ tsp chili flakes
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 packet dry glass noodles
  • 1 garlic clove
  • 1 carrot
  • Handful of sliced mushrooms
  • 1 zucchini
  • 1 egg
  • 1 capsicum
  • 1 stalk Chinese chives
  • 1 chili
