- Peel and grate the potatoes. Squeeze any excess water out of the grated potato and place in a large bowl.
- Combine egg, baking powder, onion, flour, parsley, salt and pepper with the grated potato.
- In a large pan, heat 3 tbs vegetable oil over medium heat. Spoon the mixture into the pan making them as large as you like, flatten them into discs. Cook until crisp and golden brown.
- Repeat step 3 with the remaining mixture. Top with prosciutto, rocket and shaved parmesan. Enjoy!

- 1/3 tsp Baking Powder
- 1 Egg
- 1 tsp Plain Flour
- 1 Onion, Finely Diced
- 3 tbs Vegetable Oil
- 100g Prosciutto, Finely Sliced
- 50g Rocket
- 50g Parmesan, Shaved
