- Bring a large pot of water to boil. Once the water is boiling, add the rice and continue boiling for 25 minutes.
- Drain well, and place rice in bottom of the bowl.
- Arrange tomatoes, cucumber slices, kidney beans, corn, red onion, capsicum and spinach along the edge of the bowl.
- When you’re ready to serve, divide the avocado into the bowl. Lightly drizzle olive oil over the avocado, followed by a generous sprinkle of flaky sea salt. Serve promptly.
Ingredients
- Short grain or long-grain brown rice, rinsed
- ½ cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ½ a tin of kidney beans
- ½ cup red capsicum, sliced
- 1 tin of canned corn
- Red onion, sliced
- 1 ripe avocado, halved, pitted and thinly sliced into long strips
- Handful of spinach
- Olive Oil
- Sea Salt
