Kid-Friendly Lunch Wraps

Method

  1. In a medium bowl, combine chicken with taco seasoning until evenly coated.

  2. In a large bowl, combine cooked chicken with rice, corn, beans, spinach, tomatoes, cheese and onion until fully combined. 

  3. To assemble wraps, place tortillas on a flat surface and divide the filling between them. Rolling up tightly. 

TIP: Toast in a sandwich press until wraps are lightly golden brown and cheese is melted!

Ingredients

  • 3 cups cooked, shredded chicken 
  • 2 tablespoons taco seasoning 
  • 1 cup cooked rice 
  • 1/2 cup canned corn, drained and rinsed 
  • 1/2 cup canned black beans, drained and rinsed  
  • 8 large spinach tortillas 
  • 1 cup fresh baby spinach leaves 
  • 1/2 cup diced tomatoes  
  • 1/4 cup chopped onion 
  • 1/2 cup grated cheddar cheese
