Fresh Summer Salad
So delicious, this salad will be your new favourite!

In a large bowl, combine tomatoes, cucumber, red onion, basil, olives and bread.

In a small bowl, whisk together vinegar, Dijon mustard, honey, garlic clove, and remaining 1 tablespoon olive oil.

Pour over salad and toss to coat. Add feta cheese if desired. Serve immediately. Enjoy!

- 1/2 loaf of Italian bread, torn into bite-sized pieces
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large tomatoes, cut into 1-inch cubes
- 1 small cucumber, peeled and diced
- 1/2 red onion, diced
- 1/4 cup chopped fresh basil
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 garlic clove, minced
- 1/2 cup pitted olives
- 1/2 cup crumbled feta cheese (optional)
