Fresh Summer Salad

Method

  1. In a large bowl, combine tomatoes, cucumber, red onion, basil, olives and bread.

  2. In a small bowl, whisk together vinegar, Dijon mustard, honey, garlic clove, and remaining 1 tablespoon olive oil.

  3. Pour over salad and toss to coat. Add feta cheese if desired. Serve immediately. Enjoy!

Ingredients

  • 1/2 loaf of Italian bread, torn into bite-sized pieces
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large tomatoes, cut into 1-inch cubes
  • 1 small cucumber, peeled and diced
  • 1/2 red onion, diced
  • 1/4 cup chopped fresh basil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • 1/2 cup pitted olives
  • 1/2 cup crumbled feta cheese (optional)
