Cook the pearl couscous according to package instructions.

Lightly grill broccoli until just charred.

In a large bowl, mix together the cooked couscous, broccoli, avocado, pepitas, and nuts.

Drizzle with blue cheese sauce and lime juice, and mix until everything is coated. Enjoy!

- 1 head of broccoli, chopped into small florets
- 1 avocado, sliced
- 1/4 cup pepitas
- 1/4 cup nuts (we used almonds)
- 1/2 cup pearl couscous
- mixed lettuce
- 2 tablespoons blue cheese sauce
- juice of 1 lime to serve
