Delicious Green Salad with a Twist

Method

  1. Cook the pearl couscous according to package instructions.

  2. Lightly grill broccoli until just charred.

  3. In a large bowl, mix together the cooked couscous, broccoli, avocado, pepitas, and nuts.

  4. Drizzle with blue cheese sauce and lime juice, and mix until everything is coated. Enjoy!

Ingredients

  • 1 head of broccoli, chopped into small florets
  • 1 avocado, sliced
  • 1/4 cup pepitas
  • 1/4 cup nuts (we used almonds)
  • 1/2 cup pearl couscous
  • mixed lettuce
  • 2 tablespoons blue cheese sauce
  • juice of 1 lime to serve
