Chickpea Salad

  1. Cook the quinoa as per the package instructions. Once cooked, set it aside to cool.
  2. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, radishes, spinach, avocado, and parsley.
  3. For the dressing, whisk together the olive oil and lemon juice. Season with salt and pepper.
  4. Drizzle the dressing over the salad and toss well to combine.
  5. Serve the salad topped with the cooled quinoa.


  • 200g canned chickpeas, rinsed and drained
  • 125g quinoa or cous cous
  • 150g cherry tomatoes, halved
  • 1 cucumber, diced
  • 10 radishes, sliced
  • 100g fresh spinach leaves
  • 1 avocado, sliced
  • A handful of fresh parsley leaves, chopped
  • Dressing:
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
