- Cook the quinoa as per the package instructions. Once cooked, set it aside to cool.
- In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, radishes, spinach, avocado, and parsley.
- For the dressing, whisk together the olive oil and lemon juice. Season with salt and pepper.
- Drizzle the dressing over the salad and toss well to combine.
- Serve the salad topped with the cooled quinoa.

- 125g quinoa or cous cous
- 150g cherry tomatoes, halved
- 1 cucumber, diced
- 10 radishes, sliced
- 100g fresh spinach leaves
- 1 avocado, sliced
- A handful of fresh parsley leaves, chopped
- Dressing:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
