Method

  1. In a large bowl, mix together the zucchini, carrots, flour, baking powder and salt.
  2. In another bowl, whisk together the egg and milk. Pour this mixture into the dry ingredients and stir until everything is evenly moistened.
  3. Heat a large frying pan over medium heat. Add the oil and let it heat up for a minute.
  4. Scoop 1/4 cup batter for each fritter into the pan. Cook for 2-3 minutes per side, or until golden brown and cooked through. Serve hot, enjoy!

  • 1 cup Shredded Zucchini
  • 1/2 cup Shredded Carrot
  • 1/4 cup Plain Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 Egg, Beaten
  • 1/4 cup Milk
  • 1 tbs Oil, for Frying
