- In a large bowl, mix together the zucchini, carrots, flour, baking powder and salt.
- In another bowl, whisk together the egg and milk. Pour this mixture into the dry ingredients and stir until everything is evenly moistened.
- Heat a large frying pan over medium heat. Add the oil and let it heat up for a minute.
- Scoop 1/4 cup batter for each fritter into the pan. Cook for 2-3 minutes per side, or until golden brown and cooked through. Serve hot, enjoy!

- 1 cup Shredded Zucchini
- 1/2 cup Shredded Carrot
- 1/4 cup Plain Flour
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 Egg, Beaten
- 1/4 cup Milk
- 1 tbs Oil, for Frying
