  1. Preheat oven to 180°C.

  2. In a small bowl combine some parsley, thyme, sage and rosemary.

  3. Rub oil or butter over the skin of the chicken and then spread the mixed herbs over the chicken.

  4. Place the chicken into a roasting pan on a bed of fresh herbs and season with sea salt.

  5. Roast for 1 hour and 30 minutes.

  6. Serve with your favourite sides like baked potato,onion and roasted carrots.


  • Steggles family roast chicken
  • 1 tbs finely chopped flat leaf parsley
  • ½ tsp fresh thyme leaves
  • ½ finely chopped sage
  • ¼ tsp finely chopped rosemary leaves
  • oil or butter to rub the skin
  • your favourite vegetables- we love onion, pumpkin, carrots and of course, potatoes!
