Salmon Steaks with Mash

Method

  1. Peel and halve potatoes
  2. Place In a large pot with a teaspoon of salt and cover with water
  3. Pre heat oven to 180ºC
  4. Bring to the boil the potatoes and cook until a knife easily slides through the potato
  5. Approximately 10-15 minutes
  6. Drain the water from the pot and place warm pot back on stove to allow the potato’s to dry out
  7. Add a splash of olive oil to a pan and fry salmon steaks for a minute each side
  8. Transfer to oven and cook for 5-10 minutes depending on how pink you like the middleIn a bowl combine butter, ½ teaspoon salt and milk and heat in microwave for 1 minute
  9. Add milk mixture to potato’s and mash until soft and combined
  10. In a pan or griddle, heat a drizzle of olive oil. When sizzling add the asparagus and cook until al dente, allowing to sear and char on outside. Remove from heat.
  11. Remove salmon from oven and serve on the bed of mash with asparagus and wedge of lemon you seared.
  12. Placing the salmon in the oven, ensures the skin will remain crisp

  • 4 salmon steaks
  • 800grams potatoes
  • 2 tablespoons butter
  • 1 cup of milk
  • 1 lemon
  • 16 asparagus spears
  • Salt and pepper
