Salmon Steaks with Mash
A quick dinner that always hits the spot

- Peel and halve potatoes
- Place In a large pot with a teaspoon of salt and cover with water
- Pre heat oven to 180ºC
- Bring to the boil the potatoes and cook until a knife easily slides through the potato
- Approximately 10-15 minutes
- Drain the water from the pot and place warm pot back on stove to allow the potato’s to dry out
- Add a splash of olive oil to a pan and fry salmon steaks for a minute each side
- Transfer to oven and cook for 5-10 minutes depending on how pink you like the middleIn a bowl combine butter, ½ teaspoon salt and milk and heat in microwave for 1 minute
- Add milk mixture to potato’s and mash until soft and combined
- In a pan or griddle, heat a drizzle of olive oil. When sizzling add the asparagus and cook until al dente, allowing to sear and char on outside. Remove from heat.
- Remove salmon from oven and serve on the bed of mash with asparagus and wedge of lemon you seared.
- Placing the salmon in the oven, ensures the skin will remain crisp

- 1 cup of milk
- 1 lemon
- 16 asparagus spears
- Salt and pepper
