Penne Pasta with Bacon and Tomato
Even the fussiest eater will enjoy this delicious easy to make pasta

- In a large saucepan, add in chopped bacon and a splash of water over medium to high heat
- Cook until the bacon begins to brown and the water starts to evaporate
- Drain away most of the fat, but leave just enough to sauté the vegetables
- Add the onion and garlic and cook until they soften
- Pour in the pasta sauce, then sprinkle in the herb of your choice and season with salt and pepper
- Simmer for another 20 minutes
- Cook penne in lots of boiling salted water, then combine with the sauce

8 slices of bacon, chopped
1 onion, finely chopped
8 cloves of garlic, thinly sliced
450g pasta sauce
1 tablespoon fresh thyme, rosemary or oregano
A sprinkle or two of sea salt and freshly grated pepper
