Break up your week with this fresh and healthy Asian-inspired soup
Cook frozen wontons in a large pot of boiling water. Drain in a strainer and set aside.
Heat broth in the same pot until broth comes to boil. Add bok choy, mushrooms and any other vegetables. Lower heat and cook until tender. Add prawns and cook through. Add cooked wontons.
Add additional herbs and seasonings to taste such as: soy sauce, a teaspoon of sesame oil; fresh chopped basil, sesame seeds, a squeeze of lime and 1-2 tsp grated fresh ginger. Serve immediately right from the pot.
8 cups broth/stock (chicken or vegetable)
24 frozen wontons of your choice
4 cups of vegetables (bok choy, mushrooms, carrots)
