Crunchy Roast Potatoes

- Preheat oven to 200°C and line a large roasting pan with baking paper.
- Place potatoes on the baking tray, spray with olive oil and sprinkle with rosemary and salt. Bake for approximately 1 hour.
- Meanwhile, in a large frying pan fry the bacon until crispy. Allow to cool, and chop into small, bite-sized pieces.
- Remove the potatoes from the oven. Slice open the tops, carefully fill with butter, onion, bacon salt & pepper. Top with cheese (if desired).
- Return to the oven for another 5-10 minutes or until onion is cooked through. Allow to cool slightly before serving. Enjoy!

- 300g bacon
- 1 onion, diced
- 1 garlic clove, minced
- 2-3 tbsp butter
- 1 cup grated cheese (if desired)
- Fresh rosemary sprigs
- olive oil spray
- salt and pepper to taste
