  1. Preheat oven to 200°C and line a large roasting pan with baking paper.
  2. Place potatoes on the baking tray, spray with olive oil and sprinkle with rosemary and salt. Bake for approximately 1 hour.
  3. Meanwhile, in a large frying pan fry the bacon until crispy. Allow to cool, and chop into small, bite-sized pieces.
  4. Remove the potatoes from the oven. Slice open the tops, carefully fill with butter, onion, bacon salt & pepper. Top with cheese (if desired).
  5. Return to the oven for another 5-10 minutes or until onion is cooked through. Allow to cool slightly before serving. Enjoy!


  • 1kg potatoes
  • 300g bacon
  • 1 onion, diced
  • 1 garlic clove, minced
  • 2-3 tbsp butter
  • 1 cup grated cheese (if desired)
  • Fresh rosemary sprigs
  • olive oil spray
  • salt and pepper to taste
