Corn and Black Bean Tacos

Method

  1. In a large bowl combine the chopped tomatoes, onion, garlic, and jalapeno. Add the chopped cilantro and squeeze in the juice of one lime. Stir well to combine. Taste and season with salt as needed. Let the salsa sit for at least 30 minutes to allow the flavours to develop.
  2. Meanwhile, season the meat with salt and pepper. Heat the olive oil in a frying pan over medium-high heat. Add the meat and cook until browned.
  3. Add the taco seasoning and water to pan. Simmer on a medium heat until cooked through, about 5-7 minutes. Remove from heat and set aside.
  4. Heat the black beans in a small saucepan over medium heat until warm.
  5. Place corn on a pre-heated pan. Cook for 10 minutes, turning regularly until charred. Brush with melted butter.

  6. Warm the flour tortillas in a dry pan over medium heat. Be careful not to burn them.
  7. To assemble the tacos, spread a tablespoon of sour cream on each tortilla. Top with a portion of the cooked meat, followed by a spoonful of black beans and a generous dollop of salsa. Fold the tortillas in half. 
  8. Serve immediately corn cobs on the side. Enjoy your delicious homemade tacos!

Ingredients

  • 500g of your favourite diced or minced protein (beef, chicken, or pork)
  • 2 tbsp of taco seasoning
  • 1/4 cup water
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 can black beans, drained and rinsed
  • 8 small flour tortillas
  • 1 cup sour cream
  • 4 ripe tomatoes, finely chopped

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 jalapeno, seeds removed and finely chopped

  • 1 bunch cilantro, finely chopped

  • Juice of 1 lime

  • 4 whole corn on the cob

  • 2 tbsp butter
