- Prepare the Potato Wedges: Preheat your oven to 200°C. Wash the potatoes and cut into wedges. Toss them in olive oil, salt, and pepper. Arrange on a baking tray and bake for 30 minutes until golden and crispy.
- Grill the Lamb Chops: Season the lamb chops with salt, pepper, and a drizzle of olive oil. Heat your BBQ or grill pan, and cook the chops for 3-4 minutes each side for medium-rare or until done to your liking.
- Cook the Vegetables: Blanch the broccolini and green beans in boiling water for 2 minutes, then drain and plunge into icy water to retain their bright colour. Slice the chilli and toss with the vegetables.
- Prepare the Mint Sauce: Blend the mint leaves, vinegar, sugar, and salt in a food processor until smooth.
- Serve: Plate up the lamb chops with the potato wedges and vegetables. Drizzle the mint sauce over the lamb chops and serve hot.
