Baked Sweet Potato

Method
- Preheat your oven to 200°C. Prick the sweet potatoes all over with a fork, then place them on a baking sheet lined with aluminium foil. Drizzle with olive oil and season with salt and pepper.
- Bake in the preheated oven for 45-50 minutes, or until the sweet potatoes are tender and fully cooked through.
- While the sweet potatoes are baking, cook the bacon in a frying pan over medium heat until crispy. Transfer to a paper towel-lined plate to drain and cool. Once cooled, crumble the bacon into small pieces.
- Once the sweet potatoes are done, make a slit along the top of each one. Gently squeeze the ends to open them up, being careful not to break the skin.
- Top each sweet potato with a generous dollop of sour cream, sprinkle with crumbled bacon, and garnish with chopped chives and parsley.
- Season with additional salt and pepper to taste.

- 1/2 cup sour cream
- Fresh chives and parsley, finely chopped
- Salt and freshly ground black pepper, to taste
- Olive oil, for drizzling
