Sushi Sandwiches
A refreshing alternative to a lunchbox classic!

Place one sheet of nori on a flat surface. Spread the cooled sushi rice evenly over the nori, leaving a small border around the edges.

Top with cucumber, avocado, carrot and chicken breast in any desired arrangement. Place the second sheet of nori over the top and press down gently to adhere.

Using a large knife, cut the sandwich into four equal pieces. Serve with soy sauce and pickled ginger for dipping. Enjoy!
Ingredients
- 4 cups cooked sushi rice, cooled to room temperature
- 2 sheets nori
- 1 cucumber, peeled and sliced into thin strips
- 1 carrot, peeled and sliced into thin strips
- 1 avocado, peeled and sliced into thin strips
- 300g cooked chicken breast, sliced
- Soy sauce and picked ginger to serve
