Bacon and Asparagus Mini Quiches

These mini quiches are great for entertaining or as a healthy snack to add to a lunchbox!

  1. Preheat oven to 180 degrees Celsius. Grease a 12-cup muffin tin with the olive oil.

  2. In a large bowl, mix together the asparagus, bacon, eggs, cream or milk, salt and pepper until combined. Divide the mixture evenly among the muffin cups.

  3. Bake in preheated oven for 25-30 minutes, or until the quiches are golden brown and set. Let cool before serving. Enjoy!


  • 1 tablespoon olive oil
  • 2 bunches asparagus, trimmed and cut into 2cm pieces
  • 6 slices bacon, cooked and diced
  • 4 eggs, beaten
  • ½ cup thickened cream or milk
  • ½ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper
