Bacon and Asparagus Mini Quiches
These mini quiches are great for entertaining or as a healthy snack to add to a lunchbox!

Preheat oven to 180 degrees Celsius. Grease a 12-cup muffin tin with the olive oil.

In a large bowl, mix together the asparagus, bacon, eggs, cream or milk, salt and pepper until combined. Divide the mixture evenly among the muffin cups.

Bake in preheated oven for 25-30 minutes, or until the quiches are golden brown and set. Let cool before serving. Enjoy!

- 2 bunches asparagus, trimmed and cut into 2cm pieces
- 6 slices bacon, cooked and diced
- 4 eggs, beaten
- ½ cup thickened cream or milk
- ½ teaspoon salt
- ⅛ teaspoon freshly ground black pepper
