Method

  1.  Preheat oven to 180 degrees Celsius. Grease a 20cm round cake pan.

  2. Using an electric mixer, cream 1 cup butter and sugar together until light and fluffy, about 5 minutes. With mixer on low speed, add eggs, one at a time, and 1 tsp vanilla extract.

  3. In a separate bowl, sift together cocoa powder, flour, baking powder, and baking soda. Add to butter mixture in three parts alternately with 1 cup milk, beginning and ending with dry ingredients.

  4. Bake until a cake tester comes out clean when inserted into the centre, about 30 minutes. Set aside to cool.

  5. Meanwhile, to make the icing, use electric mixer to cream remaining butter on medium speed until smooth. Add cocoa and icing sugar and mix until combined.

  6. With mixer on low speed, add the remaining milk and vanilla extract and mix until icing is smooth. If too thick, add more milk; if too thin, add more icing sugar. 

  7. Ice cake and cover with all your favourite chocolate toppings! Enjoy!

  • 4 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 1 & 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 & 1/3 cup milk, at room temperature
  • 2/3 cup unsweetened cocoa powder
  • 3 cups icing sugar
  • Your favourite chocolate toppings!
