Method

  1. In a large pot oven over medium heat, heat olive oil. Add onion and garlic and cook until softened, about 5 minutes.

  2. Add tomato soup, chicken or vegetable stock, sugar, salt and pepper. Bring to a simmer and cook for 10 minutes.

  3. Stir in parsley and basil and cook for another 5 minutes.

  4. Top with fresh basil and a dollop of sour cream. Serve hot with crusty bread or croutons.

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 400g can of tomato soup
  • 1/2 cup chicken or vegetable stock
  • 1 teaspoon sugar
  • salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • Sour cream to serve
