Marg Saves the Day Canned Soup Hack
Need a quick fix for I’m hungry now, or in Marg’s case, the husband tried to cook again?

In a large pot oven over medium heat, heat olive oil. Add onion and garlic and cook until softened, about 5 minutes.

Add tomato soup, chicken or vegetable stock, sugar, salt and pepper. Bring to a simmer and cook for 10 minutes.

Stir in parsley and basil and cook for another 5 minutes.

Top with fresh basil and a dollop of sour cream. Serve hot with crusty bread or croutons.

- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 400g can of tomato soup
- 1/2 cup chicken or vegetable stock
- 1 teaspoon sugar
- salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- Sour cream to serve
