Zucchini Slice

  1. Preheat your oven to 180°C and grease a rectangular baking dish with olive oil.
  2. In a large frying pan, cook bacon and onion over medium heat until the onion is soft and the bacon is crispy.
  3. In a large bowl, combine the grated zucchini, cooked bacon and onion, and grated cheddar cheese.
  4. In a separate bowl, beat the eggs lightly and stir in the flour, salt, and pepper. Combine this with the zucchini mixture.
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
  6. Bake for 30-35 minutes, or until golden and set.
  7. Let it cool slightly before serving. Enjoy your savory zucchini slice hot or cold!

TIP: add your favourite veggies to the mixture for a health kick!


  • 1 large zucchini, grated
  • 1 cup cheddar cheese, grated
  • 200g bacon, finely chopped
  • 1 onion, diced
  • 5 eggs
  • 1 cup self-raising flour
  • Salt and pepper to taste
  • Olive oil, for greasing
