Lemon & Coconut Slice
A beautiful tangy slice topped with lemon icing - bring them along to your next morning tea, pop them in the kid’s lunchboxes, or take them along to family events!

- Line a dish with the approximate dimensions of 20cm by 20cm with baking paper
- Heat condensed milk and butter in a small saucepan, stirring regularly, until butter has melted and combined
- Blend biscuits in a food processor into fine crumbs
- Combine crumbs, coconut and lemon rind in a bowl
- Add warm butter mixture
- Stir until well combined
- Press biscuit mixture into prepared pan and flatten the top
- Make lemon icing by placing icing sugar mixture, butter and 2 1/2 tablespoons lemon juice in a bowl
- Beat with a wooden spoon until smooth
- Spread icing over slice and top with shredded coconut
- Refrigerate for 1 hour
- Cut into square pieces and serve

- 1 cup Desiccated Coconut
- 1 Lemon, rind finely grated
- Lemon icing ingredients
- 2 cups Icing Sugar Mixture
- 40g unsalted Butter, softened
- 1 lemon, juiced
- 1 cup Shredded Coconut
