Lemon & Coconut Slice

Method

  1. Line a dish with the approximate dimensions of 20cm by 20cm with baking paper
  2. Heat condensed milk and butter in a small saucepan, stirring regularly, until butter has melted and combined
  3. Blend biscuits in a food processor into fine crumbs
  4. Combine crumbs, coconut and lemon rind in a bowl
  5. Add warm butter mixture
  6. Stir until well combined
  7. Press biscuit mixture into prepared pan and flatten the top
  8. Make lemon icing by placing icing sugar mixture, butter and 2 1/2 tablespoons lemon juice in a bowl
  9. Beat with a wooden spoon until smooth
  10. Spread icing over slice and top with shredded coconut
  11. Refrigerate for 1 hour
  12. Cut into square pieces and serve

  • 2/3 cup Sweetened Condensed Milk
  • 120g Butter
  • 300g Granita Biscuits
  • 1 cup Desiccated Coconut
  • 1 Lemon, rind finely grated
  • Lemon icing ingredients
  • 2 cups Icing Sugar Mixture
  • 40g unsalted Butter, softened
  • 1 lemon, juiced
  • 1 cup Shredded Coconut
