Easter Cookies
This recipe is so much fun! Get the kids in the kitchen to help make these delicious Easter goodies!

Preheat oven to 175°C. Line two baking sheets with parchment paper.

In a large bowl, whisk together flour, sugar, baking powder and salt. Set aside.

In a separate bowl, whisk together eggs, melted butter and vanilla extract.

Add egg mixture to flour mixture and stir until combined.

Roll out the cookie dough and use your favourite Easter cookie cutters to cut out Easter bunny and egg shapes!

Place cookies on the prepared baking sheets, leaving enough space in between each cookie. Using the back of a spoon, flatten cookies slightly so they don’t puff up too much in the oven.

Bake for 12-14 minutes or until cookies are golden brown and set. Let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

To make the icing, beat together butter and vanilla extract until light and fluffy. Gradually add icing sugar, one cup at a time, until fully incorporated. Beat in cream or milk until desired consistency is reached.

Spread icing over cooled cookies - get creative and decorate! Top with sprinkles. Serve and enjoy!

- 2 & 1/2 cups all-purpose flour
- 3/4 cup icing sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 cup unsalted butter, melted and cooled

- 1/4 cup unsalted butter, softened
- 1/2 teaspoon vanilla extract
- 2 cups powdered sugar
- 3 tablespoons thickened cream or milk
