Pulled Pork Burgers

Method

  1. Heat oil in a saucepan over medium-high heat. Cook pork until browned all over. Transfer to a bowl.
  2. Add onion to pan and cook until starting to brown. Add garlic and paprika and cook for a further 30 seconds. Add tomato puree, maple syrup, mustard and water. Bring to a simmer.
  3. Return pork to pan. Reduce heat to low and cook covered for 2 hours or until pork is tender enough to pull apart.
  4. Place coleslaw on bun bases. Top with pork and bun tops to serve.

Ingredients

  • 8 burger buns
  • 3 garlic cloves, crushed
  • 1 tbsp olive oil
  • 1 packet of coleslaw mix
  • 1 tbsp Dijon mustard
  • 1 tbsp smoked paprika
  • 1 cup water
  • 1 onion, sliced
  • 1/3 cup maple syrup
  • 1 can tomato puree
  • 1 pork boneless leg roast, string removed
