Mouth Watering Nachos

  1. Preheat the oven to 190 degrees Celsius.

  2. Spread out a layer of corn chips on an oven-proof dish or tray.

  3. Spoon over a layer of salsa.

  4. Halve the avocado and remove the stone, then scoop out the flesh and mash it with a fork. Spread this over the salsa.

  5. Add a layer of olives, diced tomatoes, onions and jalapenos (if using).

  6. Sprinkle over the shredded cheese.

  7. Place in the oven and bake for 10 minutes until the cheese is melted and bubbling.

  8. Remove from the oven and top with some shredded cos lettuce. Serve immediately with sour cream on the side. Enjoy!


  • 1 bag of corn chips
  • 1 jar of salsa
  • 1 avocado
  • 1 small can of olives
  • 1 tomato
  • ½ a red onion
  • ¼ cup of sour cream
  • ½ a cup of shredded cheese
  • ½ a can of corn
  • 2-3 jalapenos, diced (optional)
  • ½ a head of cos lettuce, shredded
