  1. Prepare all ingredients. 
  2. Rinse your rice and bring 3 cups of water to a boil. Add rice to the boiling water, add a pinch of salt.
  3. Bring pot back to a simmer and lower heat to cook, covered for 18 minutes, or until rice is tender and water is absorbed.
  4. While the rice is cooking, cut the broccoli florets from the head & heat a pan to medium heat, add a small amount of oil and the broccoli florets. Add salt and pepper to taste. Cook for 3 minutes. Add 1/4 cup water & the garlic powder, cook until the water has evaporated.
  5. Prepare two large bowls and divide ingredients in half. Add the cooked rice & broccoli, then top with chickpeas, almonds, coriander, salt & pepper. Enjoy!


  • 1 head Broccoli
  • 200g Canned Chickpeas, Rinsed
  • 2 tbs Coriander, Finely Chopped
  • 100g Almonds, Halved
  • 1.5 cups Jasmin Rice
  • 1/4 cup Water
  • 1/2 tbs Garlic Powder
  • Oil
  • Salt
  • Pepper
