Healthy Lunch Bowl
Quick & easy weekday salad! Get creative with your recipe, use red & jasmine rice for some variety

- Prepare all ingredients.
- Rinse your rice and bring 3 cups of water to a boil. Add rice to the boiling water, add a pinch of salt.
- Bring pot back to a simmer and lower heat to cook, covered for 18 minutes, or until rice is tender and water is absorbed.
- While the rice is cooking, cut the broccoli florets from the head & heat a pan to medium heat, add a small amount of oil and the broccoli florets. Add salt and pepper to taste. Cook for 3 minutes. Add 1/4 cup water & the garlic powder, cook until the water has evaporated.
- Prepare two large bowls and divide ingredients in half. Add the cooked rice & broccoli, then top with chickpeas, almonds, coriander, salt & pepper. Enjoy!

- 100g Almonds, Halved
- 1.5 cups Jasmin Rice
- 1/4 cup Water
