Chargrilled Veggies on Toast with Hummus and Feta

Method

  1. Preheat a grill or barbecue to high heat.

  2. Slice the onion, garlic, capsicum and mushrooms.

  3. Drizzle with olive oil and season with salt and pepper. Grill for 5-7 minutes until tender.

  4. Toast the bread on the grill or barbecue.

  5. Spread with hummus and top with the grilled vegetables and feta cheese. Serve immediately. Enjoy!

  • 1/2 onion
  • 1 clove garlic
  • 1/2 capsicum
  • 4 large mushrooms
  • Olive oil
  • Hummus
  • Feta cheese, crumbled
