Vegetable Cheese Bake

Method

  1.  Preheat the oven to 200°C. Toss the cauliflower (or vegetable mix) in oil, salt and pepper. Roast for 20 minutes until browned. Remove from the oven.
  2. Over low heat add the milk and Dijon mustard. Stir until combined add 1 cup of cheese and continue to stir. Heat for 1.5 minutes.
  3. Pour the milk combination over the cauliflower. Top with the remaining cheese and bread crumbs and put back in the oven.
  4. Bake for 30 minutes or until golden brown and bubbling. Leave to cool, serve. Enjoy!

Ingredients

  • 1kg Frozen Vegetables (Or Cauliflower)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 3/4 cup Milk
  • 1 tbs Dijon Mustard
  • 2 cups Grated Cheese
  • 100g Bread Crumbs
  • 2 tbs Oil
