Smoked Salmon Ricotta & Rocket Pita Pizza

1. Pre-heat oven to 250°C / 230°C fan-forced.
2. Spread the pita with tomato passata. Scatter with Perfect Pizza cheese to evenly cover base.
Place the pizza in the oven for 10-15 minutes or until the cheese is melted and base is crispy. Remove from the oven, lay over slices of smoked salmon, sprinkle over capers, and rocket leaves. Dollop spoonful’s of the ricotta, sprinkle over lemon zest and season with salt and pepper and serve immediately.

- 1 medium pita bread
- 2 tbsp. tomato passata
- 2⅔ cups (250 g) Perfect Italiano™ Perfect Pizza cheese
- 100 g smoked salmon
- 1 tbsp. capers, drained
- ⅓ cup baby rocket leaves, to serve
- ⅓ cup (100 g) Perfect Italiano™ Ricotta
- Zest of half a lemon
- Salt and pepper, to taste
