  1. Dice chicken into 1cm cubes, drizzle over 1 tbsp oil to coat. Sprinkle spice mix and toss well until all chicken is coated.
  2. Heat a pan over high heat with a small amount of oil and cook minced garlic and diced onion for 2 minutes before adding the diced capsicum and peas for 1 minute. Remove from the heat, move the contents into a bowl to cool.
  3. Heat the pan again, this time on medium heat. Add a small amount of oil and cook the chicken for three minutes on each side or until cooked through and golden brown.
  4. In a bowl combine the chicken with the onion mixture.
  5. Lay one tortilla on a flat surface covering half of it with the grated cheese. Top the cheese with the chicken mixture. Add desired amounts of both corn and coriander and add more cheese.
  6. Fold the tortilla in half and cook on a pan over medium heat (Cover for a short period) and cook until golden brown and filling is heated.
  7. Repeat steps 5-6 until all mixture is used. Serve with guacamole and enjoy!


  • Olive Oil
  • 1/2 kg Chicken thighs
  • 2 cloves Garlic
  • 1 Onion
  • 1 Red Capsicum
  • 1/2 cup Peas
  • 1 tin Corn Kernels
  • Tortillas
  • Coriander
  • 1 sachet Chicken Spice mix
  • 250g Shredded Tasty Cheese
