Minestrone
Whip up a delicious soup to enjoy for lunch or dinner!

- Heat a large saucepan, pour in the olive oil then toss in the vegetables.
- Fry for 2 minutes or until soft.
- Sprinkle in the herbs and fry for a further 2 minutes.
- Place the bacon in the pot, add the tinned tomatoes, stock cube and water.
- Bring to a boil and then reduce to a simmer (no lid) for 1 1/2 hours (add up to another litre of water if necessary).
- Add green beans, canned beans and pasta. cook until pasta is al dente.
- Serve with a garnish of chopped parsley and parmesan. Enjoy!

- 1 tsp Basil
- 1 Chicken Stock Cube
- 4 slices Bacon, Cut into Strips
- 1 Brown Onion, Chopped
- 1/4 cup Parsley, Finely Chopped
- 2 Carrots, Chopped
- 200g Pasta
- 100g Green Beans
- 200g Canned Tomato
- 200g Four Bean Canned Mix
- Parmesan to Garnish
