Minestrone

Method

  1. Heat a large saucepan, pour in the olive oil then toss in the vegetables.
  2. Fry for 2 minutes or until soft.
  3. Sprinkle in the herbs and fry for a further 2 minutes.
  4. Place the bacon in the pot, add the tinned tomatoes, stock cube and water.
  5. Bring to a boil and then reduce to a simmer (no lid) for 1 1/2 hours (add up to another litre of water if necessary).
  6. Add green beans, canned beans and pasta. cook until pasta is al dente.
  7. Serve with a garnish of chopped parsley and parmesan. Enjoy!

1 tsp Oregano 5 cup Water 1 tsp Basil 1 Chicken Stock Cube 4 slices Bacon, Cut into Strips 1 Brown Onion, Chopped 1/4 cup Parsley, Finely Chopped 2 Carrots, Chopped 200g Pasta 100g Green Beans 200g Canned Tomato 200g Four Bean Canned Mix Parmesan to Garnish
