Lazy Chicken Stir Fry

Method

  1. Heat a large pan over medium heat with 1 tbs oil, add the sliced chicken in a single flat layer for around 4 minutes or until lightly browned rotating as needed. Remove the chicken from the pan.
  2. In the same pan, add zucchini, carrots and mushrooms (if you are feeling adventurous add capsicum, broccoli or any other vegetable you think will work). Add garlic, along with a pinch of salt and pepper, cooking for 3-4 minutes.
  3. While you are waiting, boil a pot of hot water and cook your noodles.
  4. Add the chicken back into the pan, add the vegemite, coriander and noodles. cook and stir for 2 minutes. Serve and top with black sesame seeds. Enjoy!

Ingredients

  • 1 tbs Oil
  • 140g Quick Noodles (2 Minute Noodles or Alternative)
  • 1-2 Chicken Breast, Sliced to 1cm Strips
  • 1 Zucchini, Sliced to 1cm Strips
  • 1 Carrot, Sliced to 1cm Strips
  • 100g Mushrooms, Sliced
  • 2 Garlic Cloves, Crushed
  • 2 1/2 tbs Vegemite
  • 1 handful Coriander, Finely Chopped
  • 1 tbs Black Sesame Seeds
  • Salt
  • Pepper
