Black Bean Beef and Noodle Stir Fry

Method

  1. If using un-prepared stir-fry beef strips, thinly slice the piece of beef across the grain into strips (this helps keep the meat tender as it cooks)
  2. Heat a wok with 1-tablespoon vegetable oil
  3. Add beef and cook until it browns, add black bean sauce and cook for a minute further
  4. Empty out in to a bowl
  5. Cover to keep warm
  6. In a separate bowl arrange noodles and pour over boiling water, enough to cover them
  7. Clean the wok and place over high heat once again with 1-tablespoon vegetable oil
  8. Add chopped broccolini and snow peas and cook until they soften
  9. Add noodles, drained of water, meat with sauce, bean sprouts and lime juice
  10. Combine together in wok over high heat until all is combined
  11. If stir-fry appears dry add ½-1 cup of hot water
  12. Serve topped with spring onions

Ingredients

  • 750 grams fresh hokkien noodles
  • 100g snow peas, thinly sliced on diagonal
  • 1 cup of bean sprouts
  • 1 bunch broccolini
  • 1/2 cup spring onion sliced thinly
  • 500g beef fillet steak, trimmed 
  • 1 tablespoon lime juice
  • 120ml black bean sauce
