Black Bean Beef and Noodle Stir Fry
A delicious mid-week meal that takes just 20 minutes to make.

- If using un-prepared stir-fry beef strips, thinly slice the piece of beef across the grain into strips (this helps keep the meat tender as it cooks)
- Heat a wok with 1-tablespoon vegetable oil
- Add beef and cook until it browns, add black bean sauce and cook for a minute further
- Empty out in to a bowl
- Cover to keep warm
- In a separate bowl arrange noodles and pour over boiling water, enough to cover them
- Clean the wok and place over high heat once again with 1-tablespoon vegetable oil
- Add chopped broccolini and snow peas and cook until they soften
- Add noodles, drained of water, meat with sauce, bean sprouts and lime juice
- Combine together in wok over high heat until all is combined
- If stir-fry appears dry add ½-1 cup of hot water
- Serve topped with spring onions

- 750 grams fresh hokkien noodles
- 100g snow peas, thinly sliced on diagonal
- 1 cup of bean sprouts
- 1 bunch broccolini
- 1/2 cup spring onion sliced thinly
- 500g beef fillet steak, trimmed
- 1 tablespoon lime juice
- 120ml black bean sauce
