Strawberry Trifle Glasses

Method

  1. Begin by slicing the vanilla sponge cake into 3cm cubes. Set aside.
  2. In a mixing bowl, whip the thickened cream with sugar and vanilla extract until stiff peaks form. Be careful not to overwhip.
  3. To assemble, take individual serving glasses and start by placing a layer of sponge cake cubes at the bottom.
  4. Spread a layer of strawberry jam over the sponge cake cubes.
  5. Add a generous layer of whipped cream over the jam.
  6. Repeat the layers until the glasses are filled, ending with a layer of whipped cream.
  7. Garnish the top with fresh strawberries, a sprinkling of crumbled sponge cake, and optional mint leaves for a touch of colour.
  8. Chill the trifles in the refrigerator for at least an hour before serving to allow the flavours to meld together beautifully.

  • 1 vanilla sponge cake, pre-made or your favourite recipe
  • 1/2 cup strawberry jam
  • 2 cups thickened cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries, for garnish
  • Mint leaves, for an optional garnish
