Quick & Delicious Christmas Pudding

A super simple Christmas pudding - ready in a pinch!

  1. Grease and line a microwave-safe pudding bowl.
  2. In a large bowl, mix all ingredients together until well combined.
  3. Carefully spoon the mixture into the pudding bowl. Cover with cling wrap and gently use a fork to pierce the film.
  4. Microwave for 20 - 25 mins until cooked. Pierce with a skewer and ensure it comes out clean. Leave to rest for 5 minutes.
  5. Gently turn onto a plate. Serve with brandy butter & cream.
  6. NOTE: pudding can be stored covered in the fridge, ready to re-heat on Christmas Day. Simply microwave for 3 - 4 minutes and allow to rest for 2 minutes before serving.


  • 300g mincemeat
  • 140g dried currants
  • 100g butter
  • 1 cup brown sugar
  • 4 eggs
  • 200g self-raising flour
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • 4 tbsp whiskey
  • zest of 1 orange
