Quick & Delicious Christmas Pudding
A super simple Christmas pudding - ready in a pinch!

- Grease and line a microwave-safe pudding bowl.
- In a large bowl, mix all ingredients together until well combined.
- Carefully spoon the mixture into the pudding bowl. Cover with cling wrap and gently use a fork to pierce the film.
- Microwave for 20 - 25 mins until cooked. Pierce with a skewer and ensure it comes out clean. Leave to rest for 5 minutes.
- Gently turn onto a plate. Serve with brandy butter & cream.
- NOTE: pudding can be stored covered in the fridge, ready to re-heat on Christmas Day. Simply microwave for 3 - 4 minutes and allow to rest for 2 minutes before serving.

- 140g dried currants
- 100g butter
- 1 cup brown sugar
- 4 eggs
- 200g self-raising flour
- 1 tsp baking powder
- 1 tsp mixed spice
- 4 tbsp whiskey
- zest of 1 orange
