Homemade Strawberry Ice Cream

For an extra special treat, top your scoops of ice cream with fresh whipped cream and diced strawberries. Yum!

Method

  1. In the bowl of a stand mixer fitted with the whisk attachment, whip the cream on medium-high speed until soft peaks form. Set aside

  2. In a separate bowl, stir together the sweetened condensed milk and vanilla extract until combined.

  3. Add the whipped cream to the sweetened condensed milk mixture and fold gently to combine.

  4. Gently fold in the diced strawberries until evenly distributed throughout the mixture.

  5. Pour the mixture into a large baking dish and freeze for 4 to 6 hours, or until firm.

  6. Enjoy cold, topped with fresh berries.

  • 3 cups fresh or frozen (thawed) strawberries, diced
