Halloween Chocolate Mousse

Method

  1. Start by making the chocolate biscuit crumb. Place the chocolate biscuits in a food processor and process until fine crumbs form. Add the melted butter and pulse until combined. Press the mixture into the base of individual serving dishes and refrigerate while you prepare the mousse.
  2. To make the chocolate mousse, melt the chocolate in a heatproof bowl set over a pan of simmering water (don't let the bowl touch the water). Stir until smooth, then remove from heat and set aside.
  3. In a large bowl, whisk the eggs, sugar, cocoa powder, and vanilla extract until well combined. In a separate bowl, whip the cream until it holds soft peaks.
  4. Gradually pour the melted chocolate into the egg mixture, whisking constantly. Then fold in the whipped cream until no streaks remain.
  5. Spoon the mousse over the biscuit base in the serving dishes, smoothing the tops with the back of a spoon. Refrigerate for at least 2 hours, or until set.
  6. Serve the chocolate mousse with a dusting of extra cocoa powder, if desired. Cut any remaining chocolate biscuit into headstones for decoration. Enjoy your decadent dessert!

  • For the Chocolate Mousse:
  • 200g dark chocolate, roughly chopped
  • 3 eggs
  • 1/4 cup caster sugar
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract
  • 1 cup thickened cream
  • For the Chocolate Biscuit Crumb:
  • 200g chocolate biscuits
  • 50g unsalted butter, melted
