Coconut Rum Balls

  1. In a large mixing bowl, combine the crushed vanilla wafers, 1 cup of powdered sugar, the chopped walnuts, and cocoa powder. Stir until all the ingredients are well mixed.
  2. Add the dark rum and corn syrup to the mixture. Stir until everything is well combined and the mixture holds together when squeezed. If the mixture is too dry, add a little more rum or corn syrup.
  3. Using your hands, roll the mixture into 1 inch balls.
  4. Roll each ball in the shredded coconut until it’s fully coated.
  5. Place the coconut rum balls on a baking sheet lined with parchment paper and let them sit for a few hours to firm up.
  6. Store the coconut rum balls in an airtight container in the refrigerator. They will keep for up to 2 weeks. Enjoy your delicious homemade coconut rum balls!


  • 2 & 1/2 cups of crushed vanilla wafers
  • 1 & 1/2 cups of powdered sugar
  • 1 cup of chopped walnuts
  • 2 tablespoons of cocoa powder
  • 1/2 cup of dark rum
  • 3 tablespoons of light corn syrup
  • 1 cup of shredded coconut for rolling
