Coconut Rum Balls

Method
- In a large mixing bowl, combine the crushed vanilla wafers, 1 cup of powdered sugar, the chopped walnuts, and cocoa powder. Stir until all the ingredients are well mixed.
- Add the dark rum and corn syrup to the mixture. Stir until everything is well combined and the mixture holds together when squeezed. If the mixture is too dry, add a little more rum or corn syrup.
- Using your hands, roll the mixture into 1 inch balls.
- Roll each ball in the shredded coconut until it’s fully coated.
- Place the coconut rum balls on a baking sheet lined with parchment paper and let them sit for a few hours to firm up.
- Store the coconut rum balls in an airtight container in the refrigerator. They will keep for up to 2 weeks. Enjoy your delicious homemade coconut rum balls!
