- In a medium-sized bowl, combine the chia seeds, almond milk, and maple syrup. Stir well to ensure the chia seeds are evenly distributed.
- Cover the bowl, and place it in the refrigerator for at least 4 hours, or overnight, to allow the chia seeds to soak up the almond milk and form a pudding-like consistency.
- Slice the papaya in half and scoop out the seeds. Cut the papaya into small chunks.
- Once the chia pudding is ready, give it a good stir to break up any clumps.
- Layer the chia pudding, papaya chunks, cacao nibs, and granola into jars or glasses. Begin with a layer of chia pudding, followed by a layer of papaya, a sprinkle of cacao nibs, and a sprinkle of granola. Repeat these layers until the jars are full.
- Serve immediately, or seal them with a lid and keep them in the refrigerator for a quick and easy breakfast or snack. Enjoy!
