Method

  1. In a medium-sized bowl, combine the chia seeds, almond milk, and maple syrup. Stir well to ensure the chia seeds are evenly distributed.
  2. Cover the bowl, and place it in the refrigerator for at least 4 hours, or overnight, to allow the chia seeds to soak up the almond milk and form a pudding-like consistency.
  3. Slice the papaya in half and scoop out the seeds. Cut the papaya into small chunks.
  4. Once the chia pudding is ready, give it a good stir to break up any clumps.
  5. Layer the chia pudding, papaya chunks, cacao nibs, and granola into jars or glasses. Begin with a layer of chia pudding, followed by a layer of papaya, a sprinkle of cacao nibs, and a sprinkle of granola. Repeat these layers until the jars are full.
  6. Serve immediately, or seal them with a lid and keep them in the refrigerator for a quick and easy breakfast or snack. Enjoy!
