Baked Shakshuka
A simple dish of gently poached eggs in a delicious, chunky sauce.

- Cook onion until soft. Stir in capsicum, garlic and fresh chilli until soft. Stir in paprika, cumin, ground coriander, dried chilli flakes and sugar for 1 minute.
- Add the tomatoes. Cook, stirring often until mixture is a thick consistency. Remove from heat & transfer into an oven-safe dish.
- Make 4 evenly spaced indents in the mixture. Crack an egg into each indent.
- Bake in the oven for 8-10 minutes or until the eggs are cooked to your liking.

- 1 red chilli, sliced
- 2 tsp sweet paprika
- 2 tsp ground cumin
- 1 tsp chilli flakes
- 1 red capsicum, sliced
- 1 red onion, sliced
- 2 x 400g cans Diced Tomatoes
- 3 garlic cloves, crushed
- 1/2 tsp coriander
- 4 eggs
- 1/4 tsp caster sugar
