Baked Shakshuka

A simple dish of gently poached eggs in a delicious, chunky sauce.

Method

  1. Cook onion until soft. Stir in capsicum, garlic and fresh chilli until soft. Stir in paprika, cumin, ground coriander, dried chilli flakes and sugar for 1 minute.
  2. Add the tomatoes. Cook, stirring often until mixture is a thick consistency. Remove from heat & transfer into an oven-safe dish.
  3. Make 4 evenly spaced indents in the mixture. Crack an egg into each indent.
  4. Bake in the oven for 8-10 minutes or until the eggs are cooked to your liking.

  • 1 red chilli, sliced
  • 2 tsp sweet paprika
  • 2 tsp ground cumin
  • 1 tsp chilli flakes
  • 1 red capsicum, sliced
  • 1 red onion, sliced
  • 2 x 400g cans Diced Tomatoes
  • 3 garlic cloves, crushed
  • 1/2 tsp coriander
  • 4 eggs
  • 1/4 tsp caster sugar
