Homemade Scones
Let mum put her feet up this weekend. Serve her these delicious, light and fluffy scones with a cuppa in bed!

Preheat oven to 190°C.

In a large bowl, whisk together flour, sugar, baking powder and salt until combined. Cut in butter with a pastry cutter or two knives until mixture is crumbly.

In a separate bowl, whisk together egg and cream. Add to the flour mixture and mix just until dough forms. Stir in chocolate chips and raisins until evenly distributed.

Turn onto a lightly floured surface and knead dough gently a few until it comes together. Pat or roll the dough into a 2.5cm thick circle. Cut into 8 wedges using a sharp knife or pizza cutter.

Place scones on a baking sheet lined with parchment paper and bake for 15-20 minutes, until golden brown. Serve warm and enjoy!

- 6 tablespoons cold butter, cubed
- 1 large egg, lightly beaten

- 1/3 cup dark chocolate chips
- 1/3 cup raisins
