Autumn Mushroom on Toast

  1. Preheat a grill or outdoor griddle to medium heat.

  2. In a small bowl, mix together the olive oil, garlic, oregano, salt and pepper. Brush the mushrooms with the oil mixture on both sides.

  3. Place the mushrooms on the preheated grill or griddle; cook for 4-5 minutes per side or until tender. Remove from heat and set aside.

  4. Toast the ciabatta slices in a toaster or on the grill. Brush each slice with melted butter.

  5. Place a grilled mushroom on each slice of toast and top with spinach leaves. Serve warm and enjoy!


  • 4 large portobello mushrooms, stems removed 
  • 1/4 cup olive oil 
  • 2 cloves garlic, minced or grated 
  • 1 teaspoon dried oregano  
  • Salt and freshly ground black pepper to taste 
  • 4 slices ciabatta bread 
  • 2 tablespoons butter, melted 
  • 2 cups baby spinach leaves
