The perfect delicious and easy healthy chicken and vegetable meal prep.
Coat the chicken breast in olive oil and paprika, leave to sit for 10 minutes.
Heat a pan over medium heat and add 1 tbs olive oil and the chicken breast. Once one side of the chicken breast has browned, lower the heat and cover. Leave to cook for 10 minutes or until the chicken has cooked through. Wrap in foil and leave to rest for 5-10 minutes.
Boil a large pot of water and blanch the beans and broccoli for 3-5 minutes.
In a container, add the broccoli, beans, onion and avocado. Rinse the chickpeas and add them to a bed of rice and chicken. Leave to cool before putting in the refrigerator. Enjoy!
