Stir-fry your way with the choice of chicken or pork mince for this Lunar New Year favourite!
Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the minced pork or chicken and cook until lightly browned, about 5 minutes.
Add the garlic, ginger and spring onions and cook for an additional 2 minutes.
Pour in the chicken stock and peanut butter, stirring to combine. Simmer until the mixture thickens, about 5 minutes.
Add the soy sauce and cooked egg noodles and stir to combine. Cook until heated through, about 3 minutes more.
Serve hot and enjoy!
