Lunar New Year Noodles

Method

  1. Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the minced pork or chicken and cook until lightly browned, about 5 minutes.

  2. Add the garlic, ginger and spring onions and cook for an additional 2 minutes.

  3. Pour in the chicken stock and peanut butter, stirring to combine. Simmer until the mixture thickens, about 5 minutes.

  4. Add the soy sauce and cooked egg noodles and stir to combine. Cook until heated through, about 3 minutes more.

  5. Serve hot and enjoy!

  • 2 tablespoons vegetable oil
  • 500g minced pork or chicken
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 spring onions, sliced
  • 2 cups chicken stock
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 250g pack of egg noodles, cooked according to package instructions
