Before many of us have poured our morning coffee, the Clamms team are selecting the very best wild caught fish from local fisherman in the Melbourne Seafood Centre. Here they get first access to the daily catch, before the market has even opened its doors for the day.
And that’s not even the start of the day. Back in their state-of-the-art processing facility in Yarraville, expertly trained staff are arriving at midnight to prepare the days deliveries. Oysters are being shucked and graded, fish is filleted, orders are carefully packed and labelled ready for our stores.
With sustainably sourced, premium quality ingredients, even the most novice home chef can create a quality plate.
