Salmon Steaks with Mash & Baby Spinach

Ingredients

4 salmon steaks
800grams potatoes
2 tablespoons butter
1 cup of milk
1 lemon
100 grams baby spinach
Salt and pepper

Method

Peel and halve potatoes. Place In a large pot with a teaspoon of salt and cover with water. Pre heat oven to 180ºC. Bring to the boil the potatoes and cook until a knife easily slides through the potato. Approximately 10-15 minutes.

Drain the water from the pot and place warm pot back on stove to allow the potato’s to dry out. Add a splash of olive oil to a pan and fry salmon steaks for a minute each side.

Transfer to oven and cook for 5-10 minutes depending on how pink you like the middle In a bowl combine butter, ½ teaspoon salt and milk and heat in microwave for 1 minute.

Add milk mixture to potato’s and mash until soft and combined. In a bowl toss spinach with a pinch of salt and pepper, juice of half a lemon and a splash of olive oil.

Remove salmon from oven and serve on the bed of mash with baby spinach and wedges of lemon.

TIP: Preheat the pan over high heat to prevent the salmons sticking, then immediately reducing the heat once the salmon is added. This ensures the skin will remain crisp.
