Roasted Garlic Vegetables
Serves: 4-6
Cooking Time: 55 minutes
Ingredients
- 2 bulbs garlic, peeled
- 800g mixed vegetables e.g. Potatoes, carrots, parsnips, pumpkin, sweet potato
- 4 tblsp olive oil
- 3 sprigs of rosemary
- ½ tsp flaked salt & cracked black pepper
Method
- Place peeled garlic into a large bowl.
- Peel and chop vegetables into large pieces and place in the bowl with the garlic.
- Add the oil, rosemary and salt & pepper to the bowl and toss well to coat.
- Turn the garlic & vegetables into a large baking dish.
- Bake in a pre-heated oven at 190c for 50 minutes turning vegetables occasionally.
- Serve hot as an accompaniment to any meal.
Note: Choose fresh seasonal vegetables and flavour with thyme, sage or your favourite seasoning eg Moroccan, Tuscan or Lemon & Pepper.
