Roasted Garlic Vegetables

Serves: 4-6
Cooking Time: 55 minutes

Ingredients

  • 2 bulbs garlic, peeled
  • 800g mixed vegetables e.g. Potatoes, carrots, parsnips, pumpkin, sweet potato
  • 4 tblsp olive oil
  • 3 sprigs of rosemary
  • ½ tsp flaked salt & cracked black pepper

Method

  1. Place peeled garlic into a large bowl.
  2. Peel and chop vegetables into large pieces and place in the bowl with the garlic.
  3. Add the oil, rosemary and salt & pepper to the bowl and toss well to coat.
  4. Turn the garlic & vegetables into a large baking dish.
  5. Bake in a pre-heated oven at 190c for 50 minutes turning vegetables occasionally.
  6. Serve hot as an accompaniment to any meal.

Note: Choose fresh seasonal vegetables and flavour with thyme, sage or your favourite seasoning eg Moroccan, Tuscan or Lemon & Pepper.
